For some people, owning and operating a restaurant in a small Maine city may seem like a difficult proposition. But for Will Neilson, co-owner of Solo Bistro in Bath, Maine, it’s a rewarding labor of love.
“I’ve enjoyed the natural beauty of Maine since childhood, and as an adult, I appreciate the rich history of Bath,” notes Neilson. “Living and working here just feels right. It’s important for me personally to be involved in this wonderful city, and to be active in the community where I live and work.”
Solo Bistro reflects that spirit, and Will credits his time abroad for exposing him to many of the ideas that drive his vision of the restaurant. Neilson grew up on the east coast, and then studied and worked in various cities across Europe, in Greece, and in Kenya.
Along the way, Neilson was always struck by the fact that mealtime – not just food, but the conversation and laughter that inevitably accompanied it – was a bonding experience. It was a time to share stories, to strengthen existing friendships, and to make new ones.
In particular, a year spent in Fontainebleau, France in graduate school gave him an opportunity to experience some of the greatest food and wine he’s ever had. “It was wonderful: living in a city where good food and wine were part of the fabric of life. Eating well was not reserved only for special occasions,” Neilson says.
The friendly restaurateur brings this mindset to Solo Bistro, and has created a welcoming setting where people can relax with good wine, fine food and friends. The ingredients are fresh and locally sourced whenever possible, and the wines – hand-picked by Will – play an important role.
“I like to choose wines from smaller producers with connections to my past travels,” he says. “These wines remind me of places and times that I enjoyed, and I hope they’ll be part of equally memorable and enjoyable dinners with friends when patrons visit our restaurant.”
Neilson and his wife, Pia, whom he met while working in Greece, returned to the United States and have called Maine home for nearly a decade. They live in a restored 19th century farm house on a nearby Maine island.
