Originally from Canada, Tyne Sansom is a passionate chef who is making waves here in Maine. In his personal life, he is an avid locavore, and he is committed to taking Solo Bistro – already a leader in locally sourced food in the Mid Coast area – to a whole new level with local and sustainable food.
Tyne grew up in Canada and Northern Maine where he was influenced by the distinct French Canadian culture. After culinary school he spent some time in New Mexico and a love of Southwestern cuisine blossomed. These influences, along with his classical French culinary education informed his unique perspective of modern and traditional comfort foods.
Tyne’s first career aspiration as a child was to be a chef. Later, as a teenager, his interests turned to music. He was an English major at the University of Maine Presque Isle and later a singer/songwriter. He always enjoyed cooking for friends and eventually decided that his future lay in the kitchen. In 2001 he matriculated at the New England Culinary Institute in Montpelier, Vermont, from which he graduated in 2003. There he met his wife, Shyanne, then a fellow student and now herself a pastry chef.
Tyne started his career working with Michele Mahi, one of Vermont’s most successful restaurateurs. His first job as a Chef was at the very popular Black Door Bistro in Montpelier. Later, he and Shyanne moved their two small boys to New Mexico, his wife’s native state, in order for her to pursue her career. He fell in love with New Mexico Green Chiles, and learned all he could about New Mexican cuisine. Eventually, though, Tyne and Shyanne realized that their hearts lay in New England and they packed up the family and moved to Bath. Lately, Tyne has expanded his culinary interests to beer and brews some of the best beer around.
Tyne has worked at several restaurants in the area, most recently as the Chef of the Maine Dining Room at the Harraseekett Inn. Now he is thrilled to take on the challenge of the role of Head Chef at Solo Bistro. He is looking forward to seeking out all the local produce and meat that he can and using it to make delicious food while expressing his creativity.
While not in the kitchen, Tyne enjoys brewing beer, eating good food and spending time with his wife Shyanne and boys Tanyn, Quinn and Leo.
